Sometimes I want to not only check if I watched an episode, but also check when exactly I watched it. I know there’s a History tab but it seems like it only goes back to a limited time and doesn’t show the full history. It would be much more convenient if I could see the exact watch date directly when I tap on an episode.

Yes, SeriesGuide currently deletes when an episode was watched after 30 days. This data is also not included in backups. And movies are not considered at all.
A future goal is to have a history of when an episode or movie was watched.
